How can I bake gluten free bread in a machine?

This is from Gluten-Free Quick & Easy by Carol Fenster, PH.D.
First you need to make a mix, she calls, Carol's yeast Bread mix
8 cups potato starch
4 cups Carol's Flour Blend ( below)
8T cane sugar
8t xanthan gum
6t table salt
4t gar gum

Combine all the ingredients in a large storage container or plastic storage bag. This needs to be mixed very good. you can 1/2 it.

Carols' Flour blend
1 1/2 cups sorghum flour
1 1/2 cups potato starch or cornstarch
1c tapioca flour
Mix together very good.
Now the bread recipe!
1 1/3 cups milk
3 large egg whites (1/2 c) at room temp
1/4 c unsalted butter, melted, or canola oil
2t cider vinegar
3 cups Carol's yeast bread mix
1 envelope active dry yeast.

Grease the pan of a 1 1/2 pound bread machine with shortening or butter. In a large bowl, whisk together the milk, egg whites, butter and vinegar until thoroughly mixed. Pour the mixture into the pan. Whisk the bread mix and yeast in a large bowl until mixed. Add to the mixture in the pan. Set the bread machine controls and back according to the manufacture's directions. It is a lot of work, but a good basic gluten free bread.
