Cherry Blossoms


  • 2 eggs
  • 3/4 cup sugar
  • 1 package cream cheese (16 oz.)
  • 2 tsp. vanilla
  • 16 vanilla wafers
  • 1 can cherry pie filling (or can use other flavor of pie filling)


In a large bowl, beat eggs and sugar together. Break cream cheese into pieces, and then add them to the mixture. Beat until smooth, about 10 minutes and add vanilla. Place 16 cupcake paper liners in muffin tins and drop 1 wafer in the bottom of each liner. Fill 3/4 full with cream cheese mixture. Bake at 375 degrees F for 10-12 minutes. They will look pale and sunk in after cooling. Top with cherry pie filling or any other pie filling you would like.
