finishedEdible Pots of GoldThis a super simple recipe for St. Patrick's Day that is kid-friendly. These little pots of gold are made with peanut butter cups, but you can also use mini chocolate cupcakes or Rolo candies. Topped with a bit of frosting and edible gold glitter, these make great dessert toppers, or can be eaten as is.

I used very low sugar homemade cream cheese frosting because the peanut butter cups are sweet enough as is. The end result tastes like an extraordinary mini peanut butter cheesecake. Yum!

Total Time: 15 minutes

Steps:

  1. Unwrap the mini peanut butter cups, but leave the bottom liners on them.

  3. Add a couple drops of yellow food colouring to the cake frosting and stir well.

  5. Put a little dollop of frosting onto the peanut butter cup.

  7. Sprinkle frosting with edible gold glitter. Place a peanut butter cup wrapper below to catch the glitter that falls to use on the next cup. Repeat the process.
