Tomato Garlic Basil Sauce

My personal favorite omelet to top with this is cheese and asparagus.

Ingredients:

  • 1 Tbsp. butter
  • 1 medium tomato, chopped
  • 1/2 tsp. minced garlic
  • 1 Tbsp. fresh basil, chopped
  • salt to taste

Directions:

Melt butter in a small saucepan over medium heat. Add tomato, garlic, basil and salt. Cook, stirring occasionally, for about 5 minutes or until heated through.

Meanwhile, cook your omelet and once the omelet is ready top it with the sauce and serve ;-)
