Buy Pontiac seed potato (or other red potato)
Cut so each piece has 3 eyes minimum

Red potatoes grow the same as white ones, just the variety makes them red. Desiree is another popular red variety. How long they need to stay in the ground depends on whether you choose an early or maincrop potato (it should say this on the label). Potatoes are pretty easy to grow, provided pests don't get them. They like rich soil and need regular watering. If you don't care to dig you can get a pretty good harvest by growing potatoes in containers, too.
