Buy a packaged quality cocoa mix approximately 4-5 weeks before you plan to use it. Place it in a canning jar. Add a vanilla bean or two, ground cinnamon and sugar mixed to taste. Replace canning lid and seal tightly. The 4 or so weeks in storage will give plenty of time for the vanilla bean and cinnamon to gently flavor the cocoa. When you are ready to wrap it and give it to someone as a gift, use a permanent marker to write inside the canning lid your instructions for preparation. Or you can make a label to wrap around the jar with raffia. You can use fabric or lace, etc. to make a topper and also attach with raffia or ribbon. It will look great and will be greatly appreciated.
