Snow Pie

Ingredients

  • 1 cup sugar
  • 3 Tbsp. cornstarch
  • boiling water
  • 1 tsp. vanilla
  • 2 egg whites
  • 1 9 inch pie crust, baked (can use chocolate crumb crust)
  • 1 carton whipped cream
  • English walnuts (as many as you like)
  • maraschino cherries (as many as you like)

Directions

In a saucepan, stir the sugar and cornstarch together. Add boiling water and cook until it is thick and clear and add the vanilla. With an electric mixer, on the lowest speed, beat the egg whites to stiff peaks. Gradually pour the sugar mixture into the egg whites. Pour into a baked 9 inch pie crust (or chocolate crumb crust). Cover with whipped cream and arrange a circle of English walnuts and maraschino cherries on top. Refrigerate until you are ready to serve.
