Gluten Free Cornbread

Does anyone have a recipe for gluten free cornbread, cake or any gluten free recipes?

I used to miss cornbread, but not anymore. I'm now quite fond of making Southern batter bread instead. It's got the same general flavor, but it's more moist; you can use soy milk to make it dairy-free; you can use ground flax seed meal and a bit of water as an egg substitute; and it is amazing with cheese or beef sausage mixed in, if you can/will eat those. Southern Corn Bread

1/3 Cup ANY oil
1/3 Cup Sugar
1 Egg
1 1/4 Cups Milk
1 Cup Corn Meal
1 Cup ANY gluten-free flour (does NOT have to be a mix - I use millet flour or brown rice flour)
1/2 Teaspoon Salt
4 Teaspoons Baking Powder

Cream shortening & sugar, add egg & milk, mix. Pour in corn meal & GF flour, salt & baking powder. Stir just till mixed through. Pour into greased hot skillet & bake at 475 degrees till lightly brown on top & edges.

NOTE 1 : You can substitute any flours that you like here - it is almost fool proof. I have used another 1/2 cup of corn meal & 1/2 cup soy flour & it turns out perfect. You can also use coarse ground corn meal as part of this mix & it is crunchier.

NOTE 2: For those not doing dairy you can substitute liquid of your choice.

Bob's Redmill products are the best I've seen so far. Check out these links, he also has recipes on this site. A lot of the gluten free products have recipes right on the package too. I'm not sure about where you can get the products in Canada but here in the states, Nob Hill/Raley's, Safeway, Whole Foods, Trader Joe's all carry some of the line, depends on the store as to how much they carry. Hope this helps!
