Dinner in a Pumpkin
Ingredients
1 small to medium pumpkin
1 chopped onion
2 Tbsp. vegetable oil
1 1/2 to 2 lb. ground beef
2 Tbsp. soy sauce
3 Tbsp. brown sugar
1 can sliced mushrooms
1 can cream of chicken soup
1 1/2 cups cooked rice
1 can sliced water chestnuts, drained
Directions
Saute onion until tender; add beef until browned (discard grease). Stir soy, sugar, mushrooms, and soup into mixture; simmer for 10 minutes. Add chestnuts and rice. Place mixture into cleaned, painted pumpkin. Bake at 350 degrees F for 1 1/2 hours until pumpkin is tender. Put pumpkin on a serving plate. Remove top and serve meal from pumpkin. For the vegetable, scoop out cooked pumpkin and serve.

I've been making for years. I use deer meat. Don't "paint" pumpkin. It is edible as well... a "squash"!
