Avocado Horseradish Dip
This is really good on sandwiches such as roast beef, corned beef, turkey, tomato, on its own and, of course, as a dip for chips.
- 1 large avocado
- 2 Tbsp. onion, finely chopped
- 2 Tbsp. lemon juice
- 1/8 tsp. salt
- 2 tsp. prepared horseradish, or more to taste
Roughly mash avocado and stir in onion, lemon juice, and salt. Stir in horseradish and add another teaspoon or two if desired. Cover and chill for one hour to allow the flavors to blend.
