I am looking for a recipe for a pastry which is a ball shape like an 'aebleskiver', but a pastry dough rather than a pancake dough. I want to use it with a cream filling for hors d'oeuvres. Thanks.
Try the frozen roll (bread) dough. You can bake it and make monkey bread or make fried dough.

The pastry is called choux pastry and you can use it for sweet or savoury fillings.

Sounds like you are looking for a cream puff recipe. You can form it into little balls. Just do a search for cream puffs on recipe sites. I have made them and filled them with everything from chicken salad to creamy, sweet fillings.
Something fast and easy that looks impressive would be phyllo shells--in your grocery's freezer case. They're ready made, and can be filled sweet or savory.
