Does anyone have a recipe for canning sweet potatoes in a jar without using a pressure canner? Thanks in advance.

Sweet potatoes are low acid, so it isn't safe to can them in a water bath. That's why all the recipes you find tell to can them under pressure. I'm sure someone someplace did it at some time, but it's not considered safe.
