Beer Battered Fish

Beer-Battered Fish I

Ingredients

  • vegetable oil
  • 1 pound fish fillet or uncooked, peeled large shrimp,thawed
  • 3-4 Tbsp. bisquick
  • 1 cup Bisquick
  • 1/2 cup beer
  • 1 egg
  • 1/2 tsp. salt

Directions

Heat oil (1-1/2 inches) in heavy saucepan or deep fryer.

Lightly coat fish or shrimp with 3-4 Tbsp. Bisquick.

Mix remaining ingredients with mixer until smooth. (If batter is too thick, stir in additional beer 1 Tbsp. at a time until desired consistency.) Dip shrimp or fish into batter, letting excess drip into bowl.

Fry about 2 minutes each side or until golden brown.

Beer-Battered Fish II

Ingredients

A nice accompaniment to this dish is lightly buttered rice, steamed green beans and a romaine salad with vinaigrette dressing.
  • 1 lb. fish fillets, such as tilapia, cod or snapper
  • 1 cup plus 4 Tbsp. flour
  • 1/2 cup beer
  • 1 egg
  • 1/2 tsp. salt
  • Pepper to taste
  • Vegetable Oil
  • Lemon wedges

Directions

Heat the oil in about 1 1/2 inches of oil in a skillet or deep fryer to about 350 degrees F. Lightly coat the fish with the 4 Tbsp. of flour.

Mix remaining ingredients until smooth. (Add a tiny bit more beer if batter is too thick for your liking). Dip fish into batter and fry for about 2 minutes on each side or until golden brown; drain.

Serve hot with lemon wedges for extra flavoring on both the fish and rice :-)
