- 8-10 potatoes (cooked and mashed)
- 1 (8oz.) pkg. cream cheese
- 1 cup sour cream
- 5-6 Tbsp. butter
- 1/2 Tbsp. chives (optional)
Add butter to potatoes and mash. Beat cream cheese and sour cream together and then add to potatoes. Beat until light and fluffy. Add the chives if desired. Spoon into a 2 qt. casserole and brush with soft butter and sprinkle with paprika. Bake at 350 degrees for 30 minutes. May be made up to the day before and refrigerated. Take out 20 minutes before baking and bake for 1 hour at 350 degrees. Serves 8-10 people.
