Boysenberry Dessert

Ingredients

  • 15 graham crackers
  • 1/4 cup butter
  • 1 1/2 cups boysenberries
  • 2 Tbsp. cornstarch
  • 1/2 cup sugar
  • 1 cup (8 oz) of mini marshmallows
  • 1/2 cup milk
  • 1 cup whipped cream

Directions

Finely crush the graham crackers. Add 1/4 cup melted butter to graham crackers. Mix. Save 1/4 of this mixture for topping, put rest of cracker mixture in bottom of an 8x8 inch square cake pan.

Cook 1 1/2 cups of boysenberries with 2 Tbsp. cornstarch and 1/2 cup sugar. Let mixture cool.

Melt marshmallows in 1/2 cup milk and cool. Add 1 cup whipped cream.

On top of graham cracker mixture in pan, place the marshmallow/cream mixture, then add the berry mixture. Lastly, add the remaining graham cracker crumb mixture. I sprinkle walnut pieces on top of cracker crumb mixture to add crunch to the dessert. Cool several hours.
