Eat Healthy Pasta and Broccoli Bake

Ingredients

  • 1 package frozen broccoli
  • 1 (12oz.) wheat pasta
  • 8 slices low-fat American cheese
  • 1/4 cup 1% milk
  • 6 green onions
  • 1/4 stick margarine

Directions

Cook pasta 12 minutes and drain. Grease 2 qt. casserole. While pasta is cooking, melt margarine and saute' onions and broccoli. Then put lid on and steam for a few minutes. Put pasta in casserole dish and top with 4 slices cheese then veggies and milk and 4 more slices cheese. Bake at 350 degrees F for 30 minutes.

You could make this even healthier by eliminating the margarine and using olive oil or Enova (body absorbs less of the Enova oil). Use lower fat REAL cheese instead of American (american is really just oil and milk solids compressed) or better yet, use less of a good quality flavorful cheese such as Swiss, Parmesan or Reggian. Grate the hard cheeses with a fine grater and people will think they gets LOTS of cheese.
