I use my muffin top pan to cook eggs for egg mcmuffin style breakfast sandwiches. Just use some nonstick spray crack eggs into pan, season and put into oven until set. Yummy and so easy.
You can use pretty much any reg muffin recipe in a muffin top pan. Most recipes using 1 3/4 to 2 cups of flour will make 6 large muffin tops.
The ones that are more moist or have cinnamon-sugar or nut toppings or berries etc work best vs. a reg generic recipe that you would split and butter /jam.
I made cornbread in mine several times and loved it.
