Ingredients
- 1/4 cup + 1 Tbsp. low calorie margarine
- 1/4 cup chopped nuts, any
- 2 tsp. cinnamon
- 1 cup all purpose flour
- 1/2 lb. light cream cheese
- 3 Tbsp. sugar
- 1 1/2 cups light Cool Whip
- 2 tsp. instant coffee
- 1 pkg. sugar-free instant vanilla pudding mix
- 1 pkg. sugar-free instant chocolate pudding mix
- 3 cups evaporated skim milk
Directions
Preheat oven to 375 degrees F. Mix together margarine, flour, nuts, and 1/2 the cinnamon. Press into a baking dish and bake till lightly brown. Remove from oven and let cool. Break into pieces and divide into custard cups.
Blend together the cream cheese, sugar and 1 cup of Cool Whip. Add the coffee and remaining cinnamon and beat well. Pour over crust in custard cups.
Mix together the pudding mixes and evaporated milk until thick. spread on top of the cream cheese mixture and place a dollop of remaining Cool Whip over each cup before serving. Serves: 12 (prep. time: 20 minutes, cook time: 10 minutes.)
