Banana Nut Bread I

Ingredients:

  • 2 cups sifted all purpose flour
  • 1/2 tsp. salt
  • 3 tsp. baking powder
  • 1/2 cup sugar
  • 1/2 cup chopped nuts
  • 1 egg
  • 1 cup milk
  • 1 cup mashed bananas

Directions:

Sift into bowl: flour, salt, baking powder, sugar. Add chopped nuts. In small bowl beat egg with fork. Add milk, mashed bananas. Add liquid ingredients to dry ingredients. Stir gently until all mixings are moist (don't over stir). Pour batter into lightly greased loaf pan. Bake 1 hours at 350 degrees.

Banana Nut Bread II

Ingredients:

  • 3 eggs
  • 1 1/2 cup sugar
  • 1/2 cup cooking oil
  • 4 Tbsp. buttermilk
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups all purpose flour
  • 3 very ripe bananas, mashed
  • 1 cup chopped nuts
  • 1 tsp. vanilla

Directions:

In a small bowl, dissolve soda in buttermilk. In a large bowl, beat eggs, then add sugar, oil, buttermilk mixture, soda, and salt. Mix well and add flour, bananas and nuts. When all ingredients are blended well, add vanilla. Bake in greased loaf pans 50-60 minutes or till it tests done.

Banana Nut Bread III

Ingredients:

  • 2 cups sugar
  • 1 cup shortening
  • 6 ripe bananas, mashed
  • 4 eggs
  • 1 tsp. salt
  • 1/2 tsp. vanilla
  • 2 tsp. baking soda
  • 2 1/2 cups flour
  • 1 cup pecans

Directions

Cream together sugar and shortening. Add mashed bananas and stir. Add well beaten eggs and stir. Add the rest of ingredients. Bake at 350 degrees F. for 1 hour or until done. Yield: 3 loaves.
