Chocolate Eclair Dessert

Ingredients:

  • 2 (3 oz.) pkgs. French vanilla instant pudding
  • 3 cups milk
  • 1 (9 oz.) container Cool Whip
  • graham crackers
Topping:
  • 2 squares Baker's chocolate
  • 2 Tbsp. margarine
  • 3 Tbsp. milk
  • 2 Tbsp. light Karo syrup

Directions:

Line a non-stick cooking sprayed 9x13 inch pan or dish with whole graham crackers. Mix pudding and milk and fold in the Cool Whip. Put half of the pudding mixture on crackers. Then place another layer of crackers on the pudding mix. Cover with the remaining pudding mixture. Top with another layer of graham crackers (3 layers in all). Spread topping over the top. Refrigerate.

To make the topping, melt the chocolate and margarine. Add milk and syrup.

Tip: Chocolate Eclair Dessert

This is SOOOO fast and easy! Excellent for company, pot luck, or just family!

Prep Time: 15 Minutes

Ready In: 15 Minutes

Yields: 12 servings

Ingredients

  • 2 individual packages graham crackers
  • 2 (3 oz.) packages instant vanilla pudding mix
  • 3 cups milk
  • 1 (8 oz.) container frozen whipped topping, thawed
  • 1 (16 oz.) package prepared chocolate frosting

Directions

Line the bottom of a 9x13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers and frost with chocolate frosting. Refrigerate until serving.

Tip: I put can of frosting in the microwave for 30 seconds. Stir and pour!
