Cashew Basil Pesto

You can make fresh basil pesto without expensive pine nuts, cashews work just as great! Easy to whip up and pesto has many uses.

Some ways you can eat pesto:

Ad


- Dip or spread
- Pizza sauce/base
- Tossed in salad, rice, pasta, vegetables
- Garnish for soup, fish, meats
- And so much more!

Prep Time: 10 minutes

Cook Time: 2-5 minutes

Total Time: 15 minutes

Yield: 1 cup pesto

Ingredients:

Steps:

  1. Add cheese into your food processor and pulse until finely grated.
  2. Add garlic cloves, cashews, basil and pulse.
  3. Slowly incorporate oil. Then dash of salt and pepper to taste.
  4. I served my pesto with orzo and sausage cooked over the stovetop. Tossed orzo with pesto and had an quick and easy meal prepared.

Cooked garbanzo beans / chick peas are another terrific substitute for pine nuts.

Ooooh...that is great to know! I love pesto but my hubby can't eat any kind of nut (sadly including cashews). I will have to try this. It sounds...quite yummy!! Thanks for sharing!!
