Cashew Basil Pesto

Cook Time: 2-5 minutes

Total Time: 15 minutes

Yield: 1 cup pesto

Ingredients:

• 2 cups basil
• 1/3 cup whole cashews
• 3 cloves garlic
• 1/2 cup extra virgin olive oil
• dash salt
• dash black pepper
• 1/2 cup Parmesan cheese

Steps:

1. Add cheese into your food processor and pulse until finely grated.

 
2. Add garlic cloves, cashews, basil and pulse.

 

 
3. Slowly incorporate oil. Then dash of salt and pepper to taste.

4. I served my pesto with orzo and sausage cooked over the stovetop. Tossed orzo with pesto and had an quick and easy meal prepared.

Cooked garbanzo beans / chick peas are another terrific substitute for pine nuts.

Ooooh...that is great to know! I love pesto but my hubby can't eat any kind of nut (sadly including cashews). I will have to try this. It sounds...quite yummy!! Thanks for sharing!!
