Cashew Brittle

Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 3/4 cup water
  • 2 cup raw cashew nuts
  • 1 tsp. vanilla
  • 1 1/2 tsp. soda

Directions

Cook sugar, corn syrup and water until thermometer reaches 250 degrees F. Add nuts, stir constantly and continue cooking. When thermometer reaches 300 degrees F, add vanilla and soda and stir until well mixed. Pour out rapidly on buttered foil on a cookie sheet. When cool, break into pieces. Note: If you have trouble finding raw cashew nuts, check health food stores as they usually carry them.
