Chicken Lettuce Cups

During the summer time, I like to make quick and easy light meals. This is a healthy one you can whip up quickly. It works perfectly with leftover rotisserie chicken.

Ingredients:

Steps:

  1. Wash and dry butter lettuce.
  2. Prep your ingredients. Dice the tomatoes, rotisserie chicken and green onions.
  3. Toss everything in a bowl.
  4. To prepare the dressing - add extra virgin olive oil, rice vinegar, mustard, mayonnaise, lemon juice in a bowl and mix well. Then toss evenly.
  5. Optional: Add a little spoon of chipotle dip for flavor and your chicken salad mixture on top.
