During the summer time, I like to make quick and easy light meals. This is a healthy one you can whip up quickly. It works perfectly with leftover rotisserie chicken.
Prep Time: 15-20 minutes
Total Time: 15-20 minutes
Yield: 2 people
Ingredients:
- rotisserie chicken
 - 1 package butter lettuce
 - 6 small tomatoes
 - 2 stems green onions
 - 2 Tbsp rice vinegar
 - 1 Tbsp yellow mustard
 - 1 Tbsp mayonnaise
 - 2 Tbsp lemon juice
 - Dash of black pepper
 - 5 Tbsp extra virgin olive oil
 - Optional chipotle dip
 
Steps:
- Wash and dry butter lettuce.
 
 
- Prep your ingredients. Dice the tomatoes, rotisserie chicken and green onions.
 - Toss everything in a bowl.
 
 
- To prepare the dressing - add extra virgin olive oil, rice vinegar, mustard, mayonnaise, lemon juice in a bowl and mix well. Then toss evenly.
 - Optional: Add a little spoon of chipotle dip for flavor and your chicken salad mixture on top.
