Grated Sweet Potato Pudding

My mother used to make this. I remember eating it as a child and it was so good. This is my cousin's recipe. When her health was good, she would make this and bring it to our covered dish family gatherings. It was enjoyed by all.

I had forgotten I had the recipe and ran across it when looking through my old recipe file. I just had to try it. After I got the sweet potatoes grated, putting it together to bake was quick and easy.

This will be a great dish to make for Thanksgiving, when the sweet potatoes in our area are fresh.

Ingredients:

Steps:

  1. Grate raw sweet potatoes.
  2. Add other ingredients in the order given.
  3. Pour into a well greased 2 quart casserole dish.

  5. Bake in medium oven (350 degrees F) for 1 hour.
  6. Serve warm.
  7. Top with whipped cream if desired.

Definitely a good one to remember for Thanksgiving. Sweet potatoes can be flavored in so many different ways.
