Orange Cake


  • 1/2 cup margarine or butter
  • 3/4 cup sugar
  • 3 eggs
  • 1 1/4 cup flour
  • 1 tsp. baking powder
  • 1 orange peel, grated
  • juice from 1 orange
  • 1/3 cup powdered sugar
  • 2 Tbsp. orange juice


Cream shortening and sugar. Add eggs one at a time. Blend in the juice from orange and grated orange peel. Add flour and baking powder. Blend to make a smooth batter. Pour into a buttered and floured 8 inch bundt cake pan. (If you do not have a pan that small, double the recipe). Bake at 350 degrees F for 45 minutes. When thoroughly baked, remove from oven and turn upside down to cool. (Three tin cans of the same size could be used to support it. When cake is cool, turn out of pan onto serving dish. Mix powdered sugar and orange juice to make glaze and pour over cake.
