Sea Beans and Mushrooms

While house sitting for a dear friend, I got to enjoy a box of organic fruits and vegetables she gets delivered. Amongst the kale, chard, pluots, cucumbers, and carrots, was a vegetable I had never seen before. The label said they were sea beans. Wikipedia tells me that sea beans are succulent herbs that grow near salt water.

We decided to give them a try and were thrilled to find that the sea beans were quite tasty. In fact, my kids LOVED them. I'll be keeping an eye out for sea beans at the farmers market from now on.

Total Time: 15-20 minutes

Yield: 6 servings

Ingredients:

Steps:

  1. Heat olive oil over medium-high heat. Saute' garlic, then mushrooms and sea beans. Add lemon juice if desired. Add pepper, if desired. Sea beans are quite salty so don't add salt without tasting.
  2. We served the sea beans over potatoes. They were also really good leftover served over leftover steak.
