Spinach Salad


Ingredients:

  • fresh mushrooms, sliced
  • green onions, sliced
  • 1 can mandarin oranges (11oz.)
  • spinach
  • 1/2 cup sliced slivered almonds
  • 2 Tbsp. sugar
  • 2 Tbsp. water
Dressing (Poppy Seed)
  • 1/3 cup cider vinegar
  • 1/2 cup sugar
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1 1/2 Tbsp. poppy seeds
  • 1 cup vegetable oil

Directions:

Microwave almonds, sugar and water on medium for 2 minutes. Cut or tear spinach. Cut up onions. Drain oranges (reserve juice) and refrigerate. Sprinkle almonds on top. For dressing: Put all ingredients except poppy seeds in blender. Add 1 1/2 Tbsp. mandarin orange juice. Slowly add vegetable oil. Pour in jar. Add poppy seeds. Mix. Mix or toss with spinach just before serving.
