Tex-Mex Spiced Lentils

I am trying to eat less meat. Lentils are a healthy and economical way to do that. These are quick and easy to prepare and are delicious. You can freeze if desired.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 4 one-half cup servings

Ingredients:

Steps:

  1. Rinse the lentils and pick out any debris.
  2. Chop the onion.
  3. Sauté the onion in one tablespoon of oil for about 3 minutes.
  4. Add the spices and sauté for another minute.
  5. Add lentils and water. Be sure to use a large enough saucepan as the lentils will more than double in size once cooked.
  6. Bring to a boil, cover tightly with a lid, reduce heat and simmer for 15-20 minutes or until the lentils are tender. Stir occasionally.

Thank you for this. I had my first taste of lentils a week ago, and from the first bite i was hooked. I called my local member-co-op and ordered a case. (The Westbrae brand canned organic low sodium ones. So versatile.) They are not only addictive, but they are easy on the stomach. AMAZING!

Sounds good but I would saute the onions without the oil.

That is an option. I always make a recipe as written the first time I make it, then tweak it to my taste.
