Frog Eye Salad


  • 1 cup sugar
  • 2 Tbsp. flour
  • 2 1/2 tsp. salt
  • 1 3/4 cup pineapple juice
  • 2 eggs (beaten)
  • 1 tsp. lemon juice
  • 3 quarts water
  • 1 tsp. cooking oil
  • 1 pkg. Acini de Pepe
  • 1 can mandarin oranges (drained)
  • 2 cans pineapple chunks (drained)
  • 1 can crushed pineapple (drained)
  • 1 carton non-dairy whipped topping
  • 1 cup mini marshmallows


Combine sugar, flour and 1/2 teaspoon of the salt. Gradually stir in pineapple juice and eggs. Cook over moderate heat, stirring until thickened. Add lemon juice. Cool to room temperature. Bring water, 2 teaspoons salt and oil to a boil. Add Acini de Pepe. Mix lightly, but thoroughly. Refrigerate overnight in tight container. Add remaining ingredients. Mix thoroughly. Refrigerate in airtight container. Will keep a week and can be frozen; however texture may be altered.

What is ancini de pepe? Is it in a package or that you can only buy in certain States. What are the ingredients? and maybe I can duplicate it here in Canada. Thank you (12/29/2004)
