Sweet and Sour Green Beans

Ingredients

  • 1 lb. green beans (4 cups), trimmed
  • 4 oz. bacon, chopped
  • 3 Tbsp. brown sugar
  • 3 Tbsp. snipped parsley
  • 2 tsp. red wine vinegar
  • 1 tsp. finely chopped shallot or onion

Directions

Cook green beans in boiling water for 15 to 20 minutes or until crisp-tender. Drain off water and set aside.

In a large skillet, cook bacon until crisp. Drain, reserving 4
teaspoons drippings. Return bacon and the reserved drippings to skillet.

Add brown sugar, parsley, vinegar, and shallot. Bring to boiling; reduce heat and simmer, uncovered, for 2 minutes.

Add green beans and heat through. Makes 4 to 6 side-dish servings.
