Granola Bars

Ingredients

  • 2 cups rolled oats (old fashioned)
  • 3/4 cup packed brown sugar
  • 1/2 cup wheat germ
  • 1 cup whole wheat flour
  • 3/4 tsp. cinnamon
  • 3/4 tsp. salt
  • 1/2 cup nuts
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 2 tsp. vanilla
  • 1 egg, beaten

Directions

Preheat oven to 350 degrees F. Grease a 9x13 inch pan (don't use non-stick, you'll have to cut them into bars and could scratch your pan). In a large bowl, combine all the dry ingredients. Make a well in the center. Pour in the oil, honey, egg and vanilla. Mix well. Pat the mixture evenly into the pan. Bake 30-35 minutes until bars begin to turn golden. Cut into bars while still warm (if you let them cool, they will be too hard to cut).

My husband loves the Nature Valley bars, but they can be so expensive. This recipe costs less than $1.00 to make 20 bars versus buying them in the store!

This sounds delicious, but I would like to know how you can buy all those ingredients for $1.00. Maybe you were not counting the ingredients you had on hand?

Recipe: Granola Bars

Ingredients

  • 1/2 cup light corn syrup
  • 1 cup brown sugar
  • 2/3 cup peanut butter
  • 1/2 cup butter or margarine, melted
  • 2 tsp. vanilla
  • 3 cups quick oats
  • 1/2 cup coconut
  • 1/2 cup sunflower seeds
  • 1/2 cup raisins
  • 1/2 cup wheat germ
  • 1 cup chocolate chips

Directions

In a large bowl combine all ingredients down to vanilla and blend well. Stir in remaining ingredients. Press mixture firmly into cake pan. A double batch makes one large cookie sheet. Bake for 15-20 minutes or until edges are slightly brown. Best if not over-baked. You can omit the coconut, raisins, wheat germ and sunflower seeds, if desired.
