Ingredients
- 1 medium potato
- 1/2 cup of frozen broccoli
- 1 pat of butter (about a teaspoon)
- 1/4 cup of water, and
- a sprinkle of cheddar cheese
- 1 medium-sized bowl with lid (microwave safe)
- a little salt and pepper to taste
Directions
Slice the potato in four, then coarsely slice a few times more to get hearty beef-sized chunks, place potatoes in the bowl and add the water. Next, add broccoli and butter. Place the lid on top (unsealed) and place in microwave for 6-7 minutes, or select the baked potato button, and allow to cook, checking for desired tenderness of both vegetables in between. Then, add cheddar cheese and cook for 1 minute more. Add salt and pepper to taste, done.
Note: This quick meal makes a good lunch and is filling. Potatoes are loaded with nutrients especially when baked or boiled instead of fried, and with broccoli you get lots of nutrients especially vitamin-K and calcium which is also found in cheddar cheese.
Instead of using salt, try one of the Mrs. Dash blends.
