White Cake

Cake

Sift:
  • 2 1/2 cups flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 cup + 1 Tbsp. sugar
Add:
  • 1/2 cup + 2 Tbsp. shortening
  • 1 1/4 tsp. vanilla
  • 1 cup + 3 Tbsp. milk
  • 5 egg whites
Beat for 8 minutes. Pour into greased and floured 9x13 inch pan. Bake at 375 degrees F for 25-28 minutes. Cool in pan 12 minutes.

Chocolate Icing

  • 2 oz. unsweetened chocolate
  • 1 Tbsp. butter
  • 1/3 cup milk
  • 2 cups powdered sugar, sifted
  • 1 tsp. vanilla
Put chocolate, butter and milk in a saucepan and heat over medium heat until butter and chocolate are melted. Cool to lukewarm. Stir in sifted sugar and add vanilla. Beat until of desired consistency. If it is too thick, add a little warm milk. If too thin, beat in a little more sugar.
