Icebox Apple Pie

Ingredients

  • 4 1/2 cups sliced peeled baking apples
  • 1 1/2 cups water
  • 1 Tbsp. butter or margarine
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 package (3 oz.) peach flavored gelatin
  • 1 package (3 oz.) reg. vanilla pudding mix
  • 1 (9inch) pie shell, baked
  • 1/4 cup graham cracker crumbs
  • 1 Tbsp. butter, melted
  • 1 1/2 tsp. sugar

Directions

In a large saucepan, combine apples, water, butter, cinnamon and nutmeg; bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes or until apples are tender. Gradually stir in gelatin and pudding mix; bring to a boil. Remove from the heat. Let stand for 5 minutes. Pour in baked pie shell. Combine graham cracker crumbs, butter and sugar; sprinkle over filling. Chill for 3-4 hours or until firm.
