Eggs in Potato Pockets

Ingredients:

  • 8 cups instant mashed potatoes
  • 1 tsp. minced onion
  • 2 Tbsp. chopped pimiento
  • 1/2 tsp. pepper
  • 8 eggs
  • 1/2 tsp. salt
  • Ad
  • 2 cup grated American cheese
  • 1/3 cup crumbled cooked bacon

Directions:

Prepare potatoes as directed on package. Mix in onion, pimiento and pepper. Spread in greased shallow 2 1/2 qt baking dish. Break eggs into 1/2 inch depressions in potatoes. Sprinkle with salt, cheese, and bacon. Bake in slow oven (325 degrees F) for 35 minutes or until eggs are consistency you desire. Serves 8.
