Caribbean Lime Coolers

I got this recipe from Betty It's lime but you'd never know the difference. Very easy recipe!

  • 1 pouch (1lb. 1.50z.) Betty Crocker sugar cookie mix
  • 1/2 cup coconut
  • 1 Tbsp. grated lime peel (about 1 lime)
  • 3 Tbsp. lime juice
  • 6 Tbsp. butter or margarine, melted
  • 1 egg
  • 1/4 cup powdered sugar

Heat oven to 350 degrees F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms. Drop dough by level tablespoons, 2 inches apart onto ungreased cookie sheets. Bake 9-13 minutes or until edges are light golden brown. Cool 1 min. Remove from cookie sheet. Cool completely, about 15 minutes. With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.

This Caribbean Lime Cooler recipe is a close match to the old Lemon Cooler cookies by Nabisco. And as I said, this recipe is lime but you'd never know, it tastes lemony. This is for all the people out there who miss those Lemon Coolers!
