Ingredients:

  • 1 (8 oz.) package angel hair pasta
  • 2 Tbsp. extra virgin olive oil
  • 1/4 onion, chopped
  • 2 tsp. minced garlic
  • 3 large plum tomatoes, diced

  • 1 Tbsp. balsamic vinegar
  • 1 (10.75 oz.) can chicken broth
  • crushed red pepper to taste
  • black pepper to taste
  • 1 Tbsp. chopped fresh basil
  • 2 Tbsp. Parmesan cheese, finely shredded, or more to taste

Directions:

Cook pasta al dente according to package instructions, drain.

Meanwhile, heat olive oil in a large heavy pot over high heat and saute onions and garlic until lightly browned. Reduce heat to medium high, add tomatoes, vinegar, and chicken broth and simmer for about 8 minutes. Stir in red pepper, black pepper, basil, and cooked pasta, toss thoroughly and simmer for about 5 more minutes. Serve pasta garnished with grated cheese.

With the price of meat nowadays, we're looking more and more to good hearty meatless meals.
This sounds so good, and this weekend is the perfect time to give it a good try.

Deeli, this is a perfect side to go with the grilled chicken we're eating more and more often these days. Our son would have to grill a pork chop for himself, but the rest of us eat a lot more chicken in the summertime especially.

More and more, I've come to appreciate pasta without meat cooked with it anyway.
