Meatballs with Rice

I can remember having this at least once every month. It was my fav.
  • 1 + 1/2 lb. of cooked meatballs, or your own
  • 2 Tbsp. butter
  • 1 onion, diced
  • 1/2 cup long grained rice
  • 1 can of stewed tomatoes, diced
  • 1/2 pkg. onion soup mix
  • 1 cup of half and half or milk
In a Dutch Oven, saute onion in butter. Add the onion soup mix, tomatoes and meatballs; simmer 15 - 20 minutes.

Stir in rice and half and half; mix well. Cover with lid or a sheet of foil and bake for 1 hour and 15 minutes in a 350 degree F oven.

Enjoy with a buttered baked potato and crusty baked bread.

Note: If too thick, add tomato juice or V-8 Juice.
