Date Bars

Ingredients

  • 1 cup brown sugar
  • 1 1/2 cup quick cooking oats
  • 1 1/2 cup flour
  • 8 oz dates
  • 1/2 cup sugar
  • 3/4 cup melted butter
  • 1 tsp. soda
  • 1 cup water

Directions

Mix together brown sugar, butter, oats, flour, and soda like pie crust. put half the crumbs into a 9x13 inch baking pan and pat down evenly. Combine dates, water, and sugar in a small saucepan and cook until thick and place over crumbs. Sprinkle remaining crumbs over date mixture, pat gently, and bake at 350 degrees F for 20 minutes. Cool completely and cut into bars.

I have also been looking for these, My Mom used to make these she is now 92

oh wow!! like you read my mind! My mom used to make these for Christmas, and I couldn't find the recipe. I have been going through her stash of recipe books and she couldn't remember how she made them. They were always my favorite cookie growing up. She is 84 and terminally ill with cancer and i am taking care of her in my home. I wanted to make her some of our favorite Christmas cookies for what will probably be her last Christmas. Thanks so much!
