Peanut Butter Chicken (Taiwan Style)

Ingredients
  • 1 - 1 1/2 lb. chicken
  • 1/2 cup peanut butter
  • 2 tsp. pepper
  • 1/4 cup soy sauce
  • 1/4 cup minced garlic

Directions

Cook approximately 1 or 1 1/2 lb. chicken (whole or in pieces) in a pot of boiling water till done, adding salt and pepper, bouillon and any other spice you choose. Drain. Place chicken in baking dish.

Heat 1/2 cup peanut butter, 2 tsp. pepper, 1/4 cup soy sauce and 1/4 cup minced garlic (what the recipe says) on top of stove. Stir constantly to keep peanut butter from scorching, if mixture seems too thick, add a little water. Cook until completely blended.

Pour over chicken. Bake at 350 degree oven for 20-30 minutes. Garnish with green onions.

Hi Jess,
It seems like it would work. Cook the chicken first in the electric fry pan (lid on), then after the chicken is cooked, remove it and mix up the rest of the ingredients for the sauce or do it separately on the stove top (if you have one), add the chicken back and cook 20 or so more minutes.

mmmmmmm!!! this sounds so good! makes me hungry thinking about it :D however, i have no working oven. would an electric fry pan with the lid on do the trick? i really would like to add this one to my menu.
