- 1 1/2 pound cheap ground meat
- 1 cup brown rice (cooked)
- 2 cans of mixed vegetables, drained
- 1-16 oz bag 2% shredded cheese
- 1 dozen eggs
- 1/2 cup half and half
- parsley flakes
- paprika for garnish
Boil meat 20 minutes briskly, drain. Spray 1 large glass pan with non-stick spray, layer meat, rice, veggies, cheese evenly. Whisk eggs and half and half until frothy, pour into casserole slowly. Garnish as desired. Bake at 325 degrees F for 45-60 minutes or until eggs are set and puffy. Serves 6
