Its tangy and delicious and super duper cheap! $4.00 to make a large pan of it!
Ingredients:
- Fresh tomatoes (the ones on the vine are best, gives a fresher taste)
- Fideo pasta* (broken up)
- 1 small can of diced chiles (med or mild)
- I small diced onion (Yellow works best)
- Garlic Pepper
- Seasoned Salt (or low sodium salt)
- 1 small can of tomato sauce
- 1 can of Italian stewed tomatoes with juice
- 2 Tbsp. butter or margarine
- 1 cup water
Directions:
Melt 2 Tbsp. butter or margarine. Break up the fideo pasta and saute it until the pasta gets golden and shiny.
Add diced onion until slightly caramelized. Add stewed and fresh tomatoes, including the juice and seeds. Add all seasonings. Add water and chiles.
Stir to mix thoroughly and simmer covered until the pasta absorbs the liquid (can add asada or other meat to make a complete meal).

Editor's Note: Fideos pasta is often from Spain, so look in your Ethnic or Mexican section of your grocery store. Many people recommend substituting broken angel hair pasta nests instead.
