A great way to use up that last bit of leftover turkey and leftover mashed potatoes.
Ingredients:
1 1/2 cups mashed potatoes
1 cup finely chopped cooked turkey
1/3 cup chopped green onions
1 egg, lightly beaten
2 Tbsp. mayonnaise
1 tsp. Dijon mustard
3/4 tsp. salt
1/2 tsp. Worcestershire
Directions:
Combine potatoes, turkey, and onions. Stir in mayo, mustard, salt, Worcestershire, and pepper to taste,. Shape into four 1/2 inch thick patties. In nonstick skillet melt butter over med. heat. Cook patties for about 10 mins. or until browned, turning carefully with spatula half-way through.

I'm raised italian, and potato patties from leftover mashed are part of my upbringing and my comfort food. Even without the turkey, which sounds great, I mix the leftover mashed with same ingreds, but plus breadcrumbs and especially parmesan or romano cheese. Pan fry till golden. I eat them with canned tuna on the side for a super cheapie comfort meal!
