Whoopie Cookie Recipes

I am looking for recipes for pumpkin whoopie cookies and banana whoopie cookies. They are a sandwich cake-like cookie with a creamy icing filling.

You may have better luck doing an internet recipe search for Whoopie pies rather than cookies. Why they're called pies, I don't know! For the cookie part of the recipe, I think any very soft cookie recipe would work. The filling is the tricky part. Here's the best recipe I've found.

1/2 cup solid vegetable shortening

1/2 cup softened butter

1 1/2 cups powdered sugar

2 cups Marshmallow Fluff

1 1/2 teaspoons vanilla extract.

Beat the first four ingredients together, then stir in the vanilla until well blended.

You can almost feel this stuff hardening in your arteries, but it makes a delicious filling for all sorts of cookies such as chocolate chip and oatmeal, and is also very tasty spread on things like banana bread or croissants. I store it in the fridge and set it out to warm up to spreadable temperature before I use it.

Here are pumpkin, banana, chocolate,

chocolate peanut butter and vanilla

whoopie pie recipes.

Whoopie Pie - Pumpkin

2 cups packed brown sugar

1 cup vegetable oil

1 1/2 cups solid pack pumpkin puree

2 eggs

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon vanilla extract

1 1/2 tablespoons ground cinnamon

1/2 tablespoon ground ginger

1/2 tablespoon ground cloves

for filling:

1 egg white

2 tablespoons milk

1 teaspoon vanilla extract

2 cups powdereed confectioners sugar

3/4 cup shortening

Preheat oven to 350 degrees F (175 degrees C).

Lightly grease baking sheets.

Combine the oil and brown sugar.

Mix in the pumpkin and eggs, beating well.

Add the flour, salt, baking powder, baking soda,

1 teaspoon vanilla, cinnamon, ginger and cloves.

Mix well.

Drop dough by heaping teaspoons onto the baking

sheets. (Or try using a 2 Tablespoon mini ice cream

scoop so they turn out the same size>)

Bake for 10 to 12 minutes.

Let cookies cool then make sandwiches from two

cookies filled with Filling.

To Make Filling:

Beat egg white and mix with the milk, 1 teaspoon

vanilla and 1 cup of the sugar. Mix well.

Then beat in the shortening and the remaining cup

of sugar. Beat until light and fluffy.

Makes 3 dozen.

Other Fillings to try:

Filling #2

1 large tub Cool Whip

8 ounces cream cheese

2/3 cup powdered sugar

2 teaspoons vanilla

Whip together. (Light, not too rich.)

Filling #3

1 cup butter

1 cup marshmallow creme

2 cups powdered confectioners sugar

2 teaspoons vanilla

Mix together well.

Whoopie Pie - Banana

4 1/2 cups flour

1 tsp. salt

2 tsp. baking powder

1 tsp. baking soda

1 cup shortening

2 cups sugar

2 eggs

2 cups mashed ripe bananas

1/2 cup sour milk or buttermilk

1 tsp. vanilla

Heat oven to 375 degrees F.

In a large bowl, combine the flour, salt, baking powder,

and baking soda; mix well and set aside.

In a separate large bowl, cream the shortening and

sugar together.

Add the eggs, mashed bananas, butttermilk, and vanilla

and beat thoroughly.

Beat in the dry ingredients.

Drop by rounded tablespoons full onto ungreased non

-stick baking sheets, 2 1/2 inches apart.

Bake for 10 to 12 minutes, or until the cookies spring

back when pressed lightly in the center.

Remove from the cookie sheets to wire racks or white

paper towels.

Cool completely before spreading with the filling.

the filling:

2 egg whites

2 tsp. vanilla

4 Tablespoons flour

4 Tablespoons milk

4 cups powdered confectioners sugar

1 1/2 cups vegetable shortening

Beat the egg whites until stiff; set aside.

Combine the other ingredients and beat very hard for

several minutes at high speed.

Thoroughly mix in the beaten egg whites.

To make the whoopie pies:

Take one cookie; spread generously with filling, then

top with another cookie.

Wrap each whoopie pie individually in plastic wrap.

Whoopie Pie - Chocolate

1 cup granulated white sugar

1 3/4 cups shortening

2 large eggs

2 cups all-purpose flour

1/2 cup baking cocoa

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup buttermilk

1 tablespoon plus 1 teaspoon pure vanilla extract

2 large egg whites

1 tablespoon vanilla extract

1/4 cup whole milk

3 cups powdered confectioners sugar

Heat oven to 350 degrees F. Grease 2 baking sheets and set aside.

To make the cookies:

In a large bowl using an electric mixer, cream together the

granulated sugar and 1/2 cup of the shortening.

Add eggs and mix well.

Onto a sheet of waxed paper, sift together the flour, cocoa, baking

soda and salt. Add to the wet ingredients, alternating with the

buttermilk.

Add 1 teaspoon of the vanilla and mix well.

Drop by tablespoonfuls onto the baking sheets.

Bake until tester comes out clean, about 10 minutes.

Remove from the oven and cool on wire racks.

To make the filling:

In a large bowl using an electric mixer, beat the egg whites until stiff.

Add the remaining 1 1/4 cups of shortening and 1 tablespoon of vanilla,

and mix well.

Add the milk and powdered sugar, and beat until smooth.

To make the pies:

Lay half of the cookies flat on a work surface.

Divide the filling among the cookies, spreading out to the edges.

Top with the remaining cookies to form sandwich pies.

Serve immediately, or cover tightly and refrigerate before serving.

Whoopie Pie - Chocolate Peanut Butter

4 cups flour

2 tsp. baking soda

1 cup powdered cocoa

dash of salt

2 cups sugar

1 cup shortening

2 eggs

1 cup milk

1 cup warm water

2 tsp.vanilla

for the cookie:

Heat oven to 375 degrees F.

In a mixing bowl, combine the flour, baking soda, cocoa

and salt; set aside.

In a separate bowl mix the sugar, shortening and eggs

together and beat for about 2 minutes at medium speed.

Add the dry ingredients to egg mixture and mix well.

Add the milk and warm water and beat at medium speed

for 2 to 3 minutes.

Add the vanilla and beat again until the mixture is

thoroughly blended.

Drop by rounded tablespoons full onto ungreased, non

-stick baking sheets and bake for 10 to 12 minutes or

until the centers of the cookies springs back when lightly

pressed.

Remove from from the baking sheets and cool on wire

racks or white paper towels.

Cool completely before spreading with filling.

for the filling:

2 T. butter

1/2 cup creamy peanut butter

3 1/2 cups powdered confectioners sugar

1/2 cup milk

Mix the butter and peanut butter together and blend well.

Add the sugar and milk. Mix with an electric mixer at

medium speed, then beat at high speed until light and fluffy.

To make the whoopie pies:

pread one cookie generously with filling, then top with

another cookie.

Wrap each whoopie pie individually in plastic wrap.

Whoopie Pie - Vanilla

1 1/2 cups soft butter

2 tsp. vanilla

5 1/2 cups flour

1 1/2 teaspoons baking soda

1 1/2 teaspoons salt

2/3 cup cocoa powder

2 1/4 cups thick sour milk or buttermilk

Cream the butter and sugar together.

Add the eggs and vanilla, beating until fluffy.

Sift the dry ingredients and add alternatively with milk.

Chill dough at least 1 hour.

Drop onto greased baking sheet.

Heat oven to 350 degrees F. and bake for 8 minutes.

for filling:

2 egg whites

2 teaspoons vanilla

1/4 cup flour

3 Tablespoons milk

2 Tablespoons powdered confectioners sugar

1 cup shortening

2 1/2 cups powdered sugar

Beat the egg whites until stiff.

Add the vanilla, flour, milk, 2 T. powdered sugar and mix.

Add the shortening and the rest of the powdered sugar,

beating until fluffy.

Spread on 1/2 the cookies. Place another cookie on top.

Wrap to seal freshness.
