I absolutely agree! Making your own pasta much simpler than you might imagine--even if you don't have a pasta machine. It's already on my list for this evening: home-made lasagne noodles as part of a delicious vegan lasagne. Yum! Recipezaar.com has some great pasta recipes and my vegan lasagne recipe is from Susan at Fat Free Vegan Kitchen (blog.fatfreevegan.com). Have fun!
