A Salad With A Twist

There are no specific amounts to this refreshingly different salad. I suggest what ever looks right depending on how many you are planning to serve. My mother used to make this along with tuna salad and a side of buttered noodles.

Ingredients

  • Iceberg lettuce, coarsly chopped
  • tomatoes (halve cherry tomatoes, roughly dice large tomoates)
  • scallions - chopped (I've use both the white and a bit of the green)
  • chopped cucumber (with or without the seeds)
  • cottage cheese and sour cream

Directions

Put all the ingredients in a bowl. You can either premix the cottage cheese and sour cream before putting on the salad or, as I do, put them right on top of salad. Either way, mix the dressing in the salad so it is totally incorporated.

I then add some salt and pepper to taste.
