I am looking for a recipe for homemade battered corn nuggets. I've found these frozen, but they're expensive and rarely available in my area. They are sort of sweet inside, with a creamy corn filling and crispy outside. I'm good at battering and breading things to deep fry, but I can't figure out how to manage this with a loose and runny filling like creamed corn. Thanks!
I don't have a recipe for you, but you could freeze small portions of creamed corn in an ice cube tray. While frozen, batter them, and fry. Worth a shot, good luck.
