Apricot Fold Overs

Ingredients

  • 2 cups flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 cup shortening
  • 2/3-3/4 cup milk
  • 1 can apricot pie filling

Directions

Sift flour with baking powder and salt, cut in shortening until mixture resembles coarse crumbs. Add milk to make a soft dough; mix until dough follows fork around bowl. Turn onto a floured surface, knead gently 1/2 minute. Roll or pat 1/8 inch thick. Cut into 3 inch circles or into diamond shapes with knife. Place a spoonful of apricot filling in center of each. Pinch edges of circles together, wetting slightly to make them stick. Fold over edges of diamonds and press down slightly. Bake on ungreased cookie sheet in hot oven, 400 degrees F, 15-20 minutes. Sprinkle with powdered sugar before serving. Makes about 3 dozen.
