Paani Puri

This is a simple recipe.

Ingredients:

  • 2 cups flour
  • 1/4 tsp. salt
  • water to make a dough

Sauce:

  • 1/4 lb. tamarind*
  • 1/2 tsp. roasted cumin seeds
  • 1/2 tsp. black pepper
  • 2 pints water
  • small bunch coriander leaves (cilantro)
  • sugar to taste
  • salt to taste
  • 1 tsp. red chili powder
*Called the "Indian Date". The fruit pulp is edible and popular.

Directions:

Sieve flour in a bowl and add water to make a stiff dough. Knead smooth and rub a little ghee in your palm of your hand. Knead until it's evenly textured. Roll out on floured surface.Cut into round discs 1 or 1 1/2 inch diameter and fry in hot oil. Till golden in colour.

For the sauce, boil the tamarind in water till soft. Sieve through strainer. Add ground spices, salt, sugar and coriander leaves. Mix all together and serve puri with sauce and chutney.

Pani Puri is an Indian snack dish. Easy way is to buy the puri part in any Indian grocery store. It is usually behind the cash register. It is around $2.99 for 20 or 25 of them. In addition, you can buy the pani puri mixture water at the same store. Follow the instructions on the box for the water mix. Boil a medium potato and have some chickpeas handy as well. Dice the potatoes and mix it with chickpeas. Make a small hole in the puri, spoon in the chickpeas and potato mixture. Dunk the puris in the water mixture and eat. Enjoy it. (02/12/2009)
